I love staying on top of the latest food trends in Europe and we always visit a select few chefs to engage with to be assured that what we do at Restaurant Mosaic at The Orient is still relevent. One of our selections were Chef Laurent Saudeau at Restaurant de La Boulaie – we share his philosophy to let the ingredients speak for themselves, as pure as possible, whilst not only creating a visual feast on the plate, but also providing the diners with balanced and complementary taste sensations.
